I have been given a lot of CAT 7 cable by a friend and ideally would like to use this to wire all PoE CCTV and networking equipment in a new house. Could you please let me know if this is possible/ recommended? Many thanks!

Yes you can use Cat 5e, Cat 6, Cat 6A or Cat 7 for PoE devices or data networking. Cat 7 offers potentially faster speeds but is heavier gauge cable and isn't suitable for connecting with standard plugs so you'll need to use face-plates and patch cables at each point where you want to terminate the cable. Most CCTV cameras only operate at 10/100 Mbps so Cat 5e is all that is required and will be easier to work with but if you've already got the Cat 7 cable it will work just fine.
